Basic Corn Bread



  • 1 1/4 cups yellow cornmeal
  • 3/4 cup flour
  • 1/4 cup granulated sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 eggs, lightly beaten
  • 1 1/4 cups milk


  1. Mix dry ingredients.
  2. Add remaining ingredients and stir just until mixed (will probably still be lumpy).
  3. Pour into a greased cast iron skillet and bake at 400 degrees F for 25 minutes.
