Cracklin' Cornbread

Cracklin' Cornbread is beloved in the southern United States.

Cracklin' Cornbread

Ingredients

  • 1 1/2 cups cornmeal
  • 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 large egg, lightly beaten
  • 2 cups buttermilk
  • 1 cup dried cracklings

Instructions

  1. Heat oven to 450 degrees F.
  2. Combine first 4 ingredients in large bowl.
  3. Add egg and buttermilk, stirring just until dry ingredients are moistened.
  4. Stir in cracklings.
  5. Place a well-greased 10 inch cast iron skillet oven for 5 minutes or until hot.
  6. Pour batter in hot skillet.
  7. Bake for 25 minutes or until golden brown.
