Hot Water Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 tablespoon sugar
  • 1 cup boiling water
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon oil
  • 1 tablespoon flour
  • 1 egg, separated and beaten

Instructions

  1. Pour water over cornmeal, salt, sugar and oil. Let stand 30 minutes.
  2. Blend in flour, baking powder and beaten egg yolk. Fold in beaten egg whites. Pour into a greased cast iron skillet or 9-inch square baking pan.
  3. Bake at 400 degrees F.
