Southwest Cornbread

Southwest Cornbread

Ingredients

  • 1 cup yellow cornmeal
  • 1 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 cup buttermilk
  • 2 eggs
  • 4 tablespoons honey
  • 2 green onions, chopped
  • 2 tablespoons raw jalapeno, diced
  • 1 (15 ounce) can Southwest corn or Mexican style corn, drained
  • 1 1/4 cups shredded mild Cheddar cheese

Instructions

  1. Heat oven to 350 degreesF. Grease well an 8 or a 9 inch baking dish.
  2. Combine the cornmeal, flour, baking powder, baking soda and salt and whisk together well.
  3. Add to the dry mixture, the melted butter, buttermilk, eggs and honey. The mixture will be slightly lumpy.
  4. Mix in the green onions, jalapeños and the corn.
  5. Complete the cornbread by mixing in the shredded Cheddar cheese.
  6. Pour into the prepared baking dish.
  7. Bake for 35 to 40 minutes or until golden brown.
