Avocado Muffins
Ingredients
- 1/4 cup butter
- 1/4 cup granulated sugar
- 1 egg
- 1 avocado, pureed
- 1 cup toasted silvered almonds
- 1 cup milk
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon salt
- Dash of grated lemon zest
Instructions
- Heat oven to 400 degrees F and prepare muffin pans.
- Cream butter and sugar together. Beat in the egg. Blend in the avocado, almonds and milk. Add dry ingredients and mix gently until all ingredients are moistened and combined.
- Bake for 20 to 25 minutes.
- Add lemon zest.
