Bran and Date Muffins
Remember taking these over to a new neighbor one morning many years ago, still
warm, wrapped in checkered cloth and nestled in a basket. Days gone by....
- 1 cup boiling water
- 1 cup dates
- 2 1/2 teaspoons baking soda
- 1/2 cup shortening
- 1 cup granulated sugar
- 2 eggs
- 2 cups 100% All Bran
- 1/2 cup chopped nuts
- 1/2 tablespoon salt
- 2 cups buttermilk
- 2 1/2 cups flour
- 1 cup 40% Bran Flakes
- Stir the boiling water, dates and baking soda until smooth; let cook.
- Cream together the shortening, sugar and eggs. Add All Bran, nuts, salt, buttermilk,
flour and Bran Flakes. Add the date mixture and bake in muffin pan for 15-20 minutes
in a 400 degree F oven.
- Refrigerate leftover dough; it will keep for a few weeks.
