Bran and Date Muffins
Remember taking these over to a new neighbor one morning many years ago, still warm, wrapped in checkered cloth and nestled in a basket. Days gone by....
Ingredients
- 1 cup boiling water
- 1 cup dates
- 2 1/2 teaspoons baking soda
- 1/2 cup shortening
- 1 cup granulated sugar
- 2 eggs
- 2 cups 100% All Bran
- 1/2 cup chopped nuts
- 1/2 tablespoon salt
- 2 cups buttermilk
- 2 1/2 cups all-purpose flour
- 1 cup 40% Bran Flakes
Instructions
- Stir the boiling water, dates and baking soda until smooth; let cook.
- Cream together the shortening, sugar and eggs. Add All Bran, nuts, salt, buttermilk, flour and Bran Flakes. Add the date mixture and bake in muffin pan for 15 to 20 minutes in a 400 degreed F oven.
- Refrigerate leftover dough; it will keep for a few weeks.
