Chocolate Brownie Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup brown sugar
  • 2/3 cup cocoa
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granola
  • 2 eggs
  • 1 cup milk
  • 1/3 cup oil
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 375 degrees F. Grease 12 muffin cups.
  2. In a large bowl combine the first six ingredients mixing well.
  3. In a separate bowl beat the eggs, milk, oil and vanilla extract well. Pour the liquid ingredients all at once in to the dry ingredients. Stir until just blended. Pour the batter in to the prepared muffin cups.
  4. Bake for 18 to 20 minutes or until firm to the touch.
