Chocolate Chip Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup apple juice
- 1/4 cup water
- 1/4 cup (4 tablespoons) melted butter
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
Instructions
- Heat oven to 375 degrees F. Spray a 12 cup muffin tin with vegetable-oil spray.
- Sift flour, sugar, cocoa, baking soda and salt in a large bowl. Mix well.
- In a small bowl, whisk together apple juice, water, butter, vinegar and vanilla extract. Pour into flour mixture and stir just until flour is moistened. Stir in chocolate chips.
- Spoon into muffin cups.
- Bake for 20 to 25 minutes, or until the top springs back when gently touched.
- Cool.
