Coconut Muffins
Yield: 48 muffins
Ingredients
- 1/2 cup shortening
- 1 cup granulated sugar
- 2 eggs
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- Dash of salt
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 (3 1/2 ounce) can flaked coconut
Instructions
- Cream together shortening and sugar.
- Add eggs and mix.
- Mix together flour, baking powder and salt; add to shortening mixture alternating with milk.
- Add vanilla extract and coconut. Mix well.
- Pour into miniature muffin pans.
- Bake at 400 degrees F for 6 to 10 minutes until lightly browned.
