Coconut Muffins

Yield: 48 muffins

Ingredients

  • 1/2 cup shortening
  • 1 cup granulated sugar
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • Dash of salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 (3 1/2 ounce) can flaked coconut

Instructions

  1. Cream together shortening and sugar.
  2. Add eggs and mix.
  3. Mix together flour, baking powder and salt; add to shortening mixture alternating with milk.
  4. Add vanilla extract and coconut. Mix well.
  5. Pour into miniature muffin pans.
  6. Bake at 400 degrees F for 6 to 10 minutes until lightly browned.
