Coffeecake Muffins
Yield: 1 dozen muffins
Ingredients
Muffins
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 4 tablespoons (1/2 stick) butter
- 1/2 cup granulated sugar
- 1 egg
- 3/4 cup milk
- 1/2 teaspoon vanilla extract
Spice Mix
- 1/2 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon cinnamon
Instructions
Muffins
- eat oven to 400 degrees F.
- Mix together dry ingredients. Make a well in the center.
- Beat butter, sugar and egg together well.
- Mix in milk and vanilla extract. Pour into well. Stir just to moisten.
- Spoon part of batter into greased muffin tin 1/3 full.
- Sprinkle Spice Mix over top.
- Top with remaining batter. Filling 2/3 full.
- Bake for 20 to 25 minutes.
Spice Mix
- Combine all ingredients, mixing well.
