Lemon Poppyseed Muffins

Lemon Poppyseed Muffins

Yield: 12 muffins

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons poppy seeds
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup frozen lemonade concentrate, thawed
  • 1/3 cup butter, melted
  • 1 egg, slightly beaten

Instructions

  1. Heat oven to 375 degrees F.
  2. In large mixing bowl, combine flour, sugar, poppy seeds, baking powder and salt.
  3. In another bowl, combine milk, lemonade concentrate, butter and egg. Stir into dry ingredients just until they are moistened.
  4. Fill lined and sprayed muffin cups 3/4 full. If desired, sugar may be sprinkled on tops of muffins before they are baked. Bake for 15 to 20 minutes or until lightly brown.
  5. Immediately remove from pans.
