Lemon Poppyseed Muffins
Yield: 12 muffins
Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 tablespoons poppy seeds
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup frozen lemonade concentrate, thawed
- 1/3 cup butter, melted
- 1 egg, slightly beaten
Instructions
- Heat oven to 375 degrees F.
- In large mixing bowl, combine flour, sugar, poppy seeds, baking powder and salt.
- In another bowl, combine milk, lemonade concentrate, butter and egg. Stir into dry ingredients just until they are moistened.
- Fill lined and sprayed muffin cups 3/4 full. If desired, sugar may be sprinkled on tops of muffins before they are baked. Bake for 15 to 20 minutes or until lightly brown.
- Immediately remove from pans.
