Magic Marshmallow Muffins

  • 2 cups Bisquick
  • 3 tablespoons granulated sugar
  • 1/4 cup milk
  • 1 egg, slightly beaten
  • 2 tablespoons melted butter
  • 12 large marshmallows
  • 2 tablespoons melted butter
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon


  1. Grease 12 muffin cups or line with paper baking cups.
  2. In a mixing bowl, combine Bisquick, sugar, milk, egg and melted butter; stir well (batter will be slightly lumpy).
  3. Spoon batter into muffin cups.
  4. Dip marshmallows into remaining butter, then into cinnamon-sugar mixture.
  5. Push a marshmallow into each muffin, making sure that marshmallow is completely covered by batter (or the marshmallow will leak out when baking).
  6. Bake at 400 degrees F for 15 to 20 minutes.
