Motherlode Muffins

Ingredients

  • 3 eggs
  • 1 cup applesauce
  • 1 1/2 cups granulated sugar
  • 1/4 cup butter
  • 2 teaspoons vanilla extract
  • 1 cup zucchini, grated
  • 1 cup carrots, grated
  • 1 1/2 cups raisins
  • 1 cup pineapple, crushed and well drained
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoons cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Beat together eggs, applesauce, sugar, butter and vanilla extract.
  2. Stir in grated zucchini, carrots, raisins, and pineapple.
  3. Mix together flour, baking powder, soda, nutmeg, cinnamon, and salt.
  4. Stir flour mixture into egg/applesauce mixture just until dry ingredients are moist - do not over-mix.
  5. Spoon into 24 paper lined cupcake tins.
  6. Bake at 350 degrees F for 25 to 35 minutes or until done.
