Oatmeal Muffins

Yield: 12 large or 18 small muffins

Ingredients

  • 1 cup quick-cooking rolled oats
  • 1 cup buttermilk
  • 1/2 cup brown sugar, packed
  • 1 large egg, beaten
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup melted butter, cooled

Instructions

  1. Soak oatmeal in buttermilk for about 30 minutes.
  2. Add sugar, egg, flour, salt, baking powder and baking soda.
  3. Add melted butter.
  4. Spoon batter into greased muffin cups, filling each 2/3 full.
  5. Bake at 400 degrees F for 25 to 30 minutes.
