Orange Marmalade Pecan Muffins

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1/3 cup vegetable oil
  • 1 egg
  • 1 1/4 cups milk
  • 1/2 cup chopped pecans
  • 6 teaspoons orange marmalade


  1. Heat oven to 425 degrees F. Lightly grease a muffin tin or place liners in muffin tin.
  2. Mix the flour, baking powder, sugar and salt together.
  3. Whip the oil, egg and milk in a blender, then mix with the dry ingredients and stir in the pecans.
  4. Fill prepared muffin tin 1/3 full with batter.
  5. Spoon a half teaspoon of marmalade on top of the batter.
  6. Fill to 2/3 full of batter over the marmalade.
  7. Bake for 25 minutes or until a wooden pick inserted in the center comes out clean.

Yield: 12 muffins
