Orange Poppy Seed Muffins

Ingredients

  • 1 1/3 cups flour
  • 1 cup granulated sugar
  • 2 tablespoons grated orange rind
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup sour cream
  • 1/3 cup butter, melted
  • 1 egg, slightly beaten
  • 2 tablespoons frozen orange juice concentrate

Instructions

  1. Blend dry ingredients.
  2. Gently stir in sour cream, butter, egg, and orange juice. Don't over-mix; batter should be lumpy.
  3. Fill muffin tins 3/4 full, and bake at 400 degrees F for 18 minutes or until tester inserted in center comes out clean.

Makes 12.
