Orange Poppy Seed Muffins

- 1 1/3 cups flour
- 1 cup granulated sugar
- 2 tablespoons grated orange rind
- 1 tablespoon poppy seeds
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup sour cream
- 1/3 cup butter, melted
- 1 egg, slightly beaten
- 2 tablespoons frozen orange juice concentrate
- Blend dry ingredients.
- Gently stir in sour cream, butter, egg, and orange juice.
Don't over-mix; batter should be lumpy.
- Fill muffin tins 3/4 full, and bake at
400 degrees F for 18 minutes or until tester inserted in center comes out clean.
