Peanut Muffins

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1/2 cup butter or margarine, melted
  • 3/4 cup dry roasted, unsalted peanuts, chopped

Instructions

  1. Combine first 4 ingredients in a large bowl; make a well in center of mixture.
  2. Combine eggs, milk and butter; add to dry ingredients, stirring just until moistened.
  3. Gently stir in peanuts.
  4. Spoon into greased muffin pans, filling three-quarters full.
  5. Bake at 400 degrees F for 15 to 20 minutes.
