Ruby Gem Muffins
- 1/2 teaspoon salt
- 1 tablespoon baking powder
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 cup pitted fresh or canned cherries, drained
- 1 egg
- 3/4 cup milk
- 1/4 cup melted butter
- Sift together the dry ingredients.
- Add the cherries and blend.
- In a separate bowl, beat the egg until thick and light in color.
- Stir in the milk and butter. Combine with the dry mixture.
- Pour batter into greased and floured muffin tins.
- Bake at 375 degrees F for 25 to 30 minutes.
