Ruby Gem Muffins

Ingredients

  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 cup pitted fresh or canned cherries, drained
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup melted butter

Instructions

  1. Sift together the dry ingredients.
  2. Add the cherries and blend.
  3. In a separate bowl, beat the egg until thick and light in color.
  4. Stir in the milk and butter. Combine with the dry mixture.
  5. Pour batter into greased and floured muffin tins.
  6. Bake at 375 degrees F for 25 to 30 minutes.
