Strawberry Oat Muffins
Ingredients
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup butter
- 1/2 cup granulated sugar
- 1 egg, beaten
- 1 cup milk
- 2/3 cup quick cooking oats
- 1/2 teaspoon almond flavoring
- 1 cup washed, hulled and chopped strawberries
Instructions
- Heat oven to 400 degrees F. Line large muffin tin with paper liners or spray with non-stick spray and dust lightly with flour.
- Stir together flour, baking powder, cinnamon and salt; set aside.
- In a large mixing bowl, cream together butter, sugar, and egg.
- Stir in dry ingredients alternately with milk.
- Stir in oats.
- Add almond flavoring.
- Fold in strawberries.
- Spoon into muffin cups, filling 3/4 full.
- Bake for 30 minutes until golden brown or until wooden pick inserted in center comes out clean. Brush with melted butter, if desired.
