Strawberry Oat Muffins


  • 1 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 cup milk
  • 2/3 cup quick cooking oats
  • 1/2 teaspoon almond flavoring
  • 1 cup washed, hulled and chopped strawberries


  1. Heat oven to 400 degrees F. Line large muffin tin with paper liners or spray with non-stick spray and dust lightly with flour.
  2. Stir together flour, baking powder, cinnamon and salt; set aside.
  3. In a large mixing bowl, cream together butter, sugar, and egg.
  4. Stir in dry ingredients alternately with milk.
  5. Stir in oats.
  6. Add almond flavoring.
  7. Fold in strawberries.
  8. Spoon into muffin cups, filling 3/4 full.
  9. Bake for 30 minutes until golden brown or until wooden pick inserted in center comes out clean. Brush with melted butter, if desired.
