Sweet Corn Muffins

Yield: 1 1/2 dozen large muffins or 3 dozen small muffins

Ingredients

• 1 cup all-purpose flour
• 1/2 cup yellow corn meal
• 1/2 cup granulated sugar
• 1/2 cup butter, melted
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 eggs
• 1/2 cup milk
• 1/2 teaspoon corn syrup

Instructions

1. Heat oven to 450 degrees F.
2. Mix first six ingredients.
3. Combine eggs, milk and syrup. Mix the flour mixture and milk mixture together.
4. Grease muffin tins and fill each cup half full of batter.
5. Bake for 9 to 12 minutes or until brown.
