Watermelon Rind Preserves Muffins

Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup butter
  • 1 cup watermelon rind preserves
  • 1 teaspoon cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 egg
  • 1 cup chopped pecans
  • 1/2 cup raisins
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Heat oven to 325 degrees F.
  2. Combine water, sugar, butter, preserves and cinnamon in saucepan and let boil 5 minutes.
  3. Remove from heat and cool.
  4. Add remaining ingredients and bake in a small muffin pan for 25 to 30 minutes.
