Hush Puppies

My sister who lives in Spring, Texas has a neighbor who is from the deep south, who always makes hush puppies at their church functions. My sister has been bragging about these puppies for the longest time, about how good and delicious they are. I told her to put up or shut up and get me the recipe. Well, wouldn't you know it, finally after 5 months, she got the recipe from her neighbor who finally gave in (she said that it was a family secret). It couldn't have come at a better time, just when I was having a craving for them. These better be as good as my sister says they are; she made me wait a long time for them. Here goes!

Ingredients

  • 2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 beaten egg
  • 3/4 cup Half-and-Half or milk
  • 3/4 cup cream-style corn
  • Sliced or chopped scallions, green part only, as much as you want
  • Hot oil for deep frying

Instructions

  1. Combine first 6 ingredients in a big bowl, add beaten egg, Half-and-Half or milk, scallions and creamed corn. Stir just until moistened (do not over-mix).
  2. In a deep fryer, heat oil to 375 degrees F. Drop by teaspoonsful into hot oil. Deep fry until golden brown on all sides.
  3. Remove from oil and drain on paper towels and serve hot.

Notes

Have the oil at the right temperature. If the oil is too hot, they will cook fast on the outside and the center will be raw.

If the oil is not hot enough, they will absorb oil and will be very greasy.

Do a sample test of one hush puppy first to see if the oil is just right.
