Seafood Cornbread

Ingredients

  • 1 1/4 cups corn meal
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup milk
  • 1 large chopped onion
  • 2 eggs
  • 1/2 to 1 cup vegetable oil
  • 1/2 large chopped bell pepper
  • 1/2 clove garlic
  • 1 can cream-style corn
  • 8 ounces grated cheese
  • Green onion
  • Jalapeno pepper, minced (if desired)
  • Creole seasoning
  • Crawfish, shrimp or crabmeat (as much or as little as you like)

Instructions

  1. Mix all ingredients well.
  2. Bake at 350 degrees F for 45 to 55 minutes in a 9 x 13 inch pan.
