Black Walnut Raspberry Bread

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1 cup granulated sugar
  • 1/3 cup confectioners' sugar
  • 1 1/2 cups fresh or 10 ounces frozen raspberries, thawed
  • 2 eggs, beaten
  • 2/3 cup vegetable oil
  • 1 cup chopped black walnuts

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a 9 x 5 x 3 inch loaf pan.
  2. Stir the dry ingredients together in a large bowl.
  3. Mix the raspberries with the eggs and oil. Stir into the dry mixture until the flour is just dampened. (Do not over-mix as the bread will be tough.)
  4. Add the walnuts.
  5. Pour mixture into prepared pan.
  6. Bake for 1 hour.
  7. Serve the bread hot with butter or sift confectioners' sugar over the top and serve cold.
