Blueberry Casserole Bread

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon grated orange rind
  • 1 cup grated sharp Cheddar cheese
  • 1 cup fresh or frozen dry pack blueberries
  • 3/4 cup orange juice
  • 2 tablespoons shortening
  • 1 egg

Instructions

  1. Combine flour, sugar, baking powder, baking soda, salt, orange rind, cheese and blueberries.
  2. Add orange juice, shortening and egg. Beat until smooth.
  3. Pour into a well greased 1 1/2 quart casserole dish.
  4. Bake at 350 degrees F for 55 to 65 minutes or until bread feels firm to the touch.
  5. Serve spread with butter.
