Blueberry Casserole Bread
Ingredients
- 2 cups sifted all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon grated orange rind
- 1 cup grated sharp Cheddar cheese
- 1 cup fresh or frozen dry pack blueberries
- 3/4 cup orange juice
- 2 tablespoons shortening
- 1 egg
Instructions
- Combine flour, sugar, baking powder, baking soda, salt, orange rind, cheese and blueberries.
- Add orange juice, shortening and egg. Beat until smooth.
- Pour into a well greased 1 1/2 quart casserole dish.
- Bake at 350 degrees F for 55 to 65 minutes or until bread feels firm to the touch.
- Serve spread with butter.
