Blueberry Cheese Bread

Slices better the day after it is baked.

Yield: 1 1/2 quart round loaf

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon grated orange rind
  • 1 cup grated old Cheddar cheese
  • 3/4 cup orange juice
  • 2 tablespoons butter, melted
  • 1 egg
  • 1 cup fresh or frozen wild blueberries

Instructions

  1. Combine flour, sugar, baking powder, soda, salt, orange rind and cheese and mix together.
  2. Add juice, butter and egg. Beat until smooth.
  3. Carefully fold in blueberries.
  4. Pour into well-greased 1 1/2 quart baking dish (round is great).
  5. Bake 350 degrees F for 55 to 65 minutes until bread is firm to touch.
