Blueberry Cheese Bread
Slices better the day after it is baked.
Yield: 1 1/2 quart round loaf
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon grated orange rind
- 1 cup grated old Cheddar cheese
- 3/4 cup orange juice
- 2 tablespoons butter, melted
- 1 egg
- 1 cup fresh or frozen wild blueberries
Instructions
- Combine flour, sugar, baking powder, soda, salt, orange rind and cheese and mix together.
- Add juice, butter and egg. Beat until smooth.
- Carefully fold in blueberries.
- Pour into well-greased 1 1/2 quart baking dish (round is great).
- Bake 350 degrees F for 55 to 65 minutes until bread is firm to touch.
