Carrot Bread

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 1/2 cups granulated sugar
  • 1 1/2 cup butter-flavored oil
  • 3 eggs, beaten
  • 2 teaspoons vanilla extract
  • 2 1/2 cups grated carrots
  • 1 cup chopped pecans or raisins

Instructions

  1. Mix and beat together all ingredients except carrots and pecans or raisins.
  2. Fold in carrots and pecans and pour into a well greased 9 x 5 inch loaf pan.
  3. Bake at 300 degrees F for 1 hour.
