Carrot Bread
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1/2 cups granulated sugar
- 1 1/2 cup butter-flavored oil
- 3 eggs, beaten
- 2 teaspoons vanilla extract
- 2 1/2 cups grated carrots
- 1 cup chopped pecans or raisins
Instructions
- Mix and beat together all ingredients except carrots and pecans or raisins.
- Fold in carrots and pecans and pour into a well greased 9 x 5 inch loaf pan.
- Bake at 300 degrees F for 1 hour.
