Casserole Banana Bread
Ingredients
- 1/4 pound butter
- 2/3 cup granulated sugar
- 2 eggs
- 1 1/3 cups mashed bananas
- 2 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons salt
- 1/4 to 1/2 cup chopped walnuts
Instructions
- Heat oven to 350 degrees F. Lightly grease an oval 1 1/2 quart casserole.
- In large saucepan over low heat, melt butter; remove from heat.
- Stir in sugar, unbeaten eggs, mashed bananas, then flour, sifted with salt and baking soda, until just blended; stir in nuts.
- Bake in prepared casserole for 60 minutes or until a wooden pick comes out clean from center.
- Cool bread for 10 minutes in casserole, then remove from casserole and finish cooling on wire rack.
- Wrap tightly in foil until serving time.
