Casserole Banana Bread

Ingredients

  • 1/4 pound butter
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 1/3 cups mashed bananas
  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1/4 to 1/2 cup chopped walnuts

Instructions

  1. Heat oven to 350 degrees F. Lightly grease an oval 1 1/2 quart casserole.
  2. In large saucepan over low heat, melt butter; remove from heat.
  3. Stir in sugar, unbeaten eggs, mashed bananas, then flour, sifted with salt and baking soda, until just blended; stir in nuts.
  4. Bake in prepared casserole for 60 minutes or until a wooden pick comes out clean from center.
  5. Cool bread for 10 minutes in casserole, then remove from casserole and finish cooling on wire rack.
  6. Wrap tightly in foil until serving time.
