Cherry Bread Delight

Ingredients

  • 1/2 cup butter
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar, firmly packed
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (16 ounce) can pitted dark sweet cherries
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 cup confectioners' sugar

Instructions

  1. In a bowl cream butter, sugar and brown sugar.
  2. Add eggs, vanilla extract and almond extract; beat until fluffy.
  3. Drain cherries and reserve 1/4 cup syrup.
  4. Slice the cherries into fourths. Add cherries and the 1/4 cup syrup.
  5. In a separate bowl, mix flour, salt and baking powder.
  6. Mix dry ingredients with cherry mixture.
  7. Pour batter into a greased loaf pan and bake at 350 degrees F for one hour on the lowest rack.
  8. Let cool, then dust with confectioners' sugar.
