Coconut Bread

Ingredients

Bread

  • 4 eggs
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 2 teaspoons coconut flavoring
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup coconut
  • 1 cup chopped nuts

Glaze

  • 1 1/2 cups granulated sugar
  • 3/4 cup water
  • 3 tablespoons butter
  • 1 teaspoon coconut flavoring

Instructions

Bread

  1. In one bowl blend eggs, sugar, oil and flavoring.
  2. In another bowl, blend dry ingredients.
  3. Alternate flour and buttermilk with egg mixture.
  4. Stir in coconut and nuts.
  5. Bake in a preheated 325 degrees F oven in two loaf pans for about 1 hour.
  6. While bread is hot in pans, pour Glaze over.
  7. Remove bread from pans and cool on wire rack.

Glaze

  1. Combine sugar, water and butter in a saucepan. Boil for 5 minutes.
  2. Add flavoring.
