Coconut Bread
Ingredients
Bread
- 4 eggs
- 2 cups granulated sugar
- 1 cup vegetable oil
- 2 teaspoons coconut flavoring
- 3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1 cup coconut
- 1 cup chopped nuts
Glaze
- 1 1/2 cups granulated sugar
- 3/4 cup water
- 3 tablespoons butter
- 1 teaspoon coconut flavoring
Instructions
Bread
- In one bowl blend eggs, sugar, oil and flavoring.
- In another bowl, blend dry ingredients.
- Alternate flour and buttermilk with egg mixture.
- Stir in coconut and nuts.
- Bake in a preheated 325 degrees F oven in two loaf pans for about 1 hour.
- While bread is hot in pans, pour Glaze over.
- Remove bread from pans and cool on wire rack.
Glaze
- Combine sugar, water and butter in a saucepan. Boil for 5 minutes.
- Add flavoring.
