Cranberry-Orange Nut Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking sod
  • 1/2 teaspoon salt
  • 2 tablespoons shortening
  • Grated peel of 1 orange
  • Juice of 1 orange plus water or Jack Daniels to measure 3/4 cup
  • 1 egg, beaten
  • 1 cup fresh cranberries, cut into halves
  • 1/2 cup chopped walnuts

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 x 5-inch loaf pan.
  2. Blend dry ingredients.
  3. Mix in shortening, orange peel, juice and egg.
  4. Fold in cranberries and nuts.
  5. Pour into prepared pan.
  6. Bake for 1 hour.
  7. Cool before slicing.
