Date Loaf with Butterscotch Sauce

Ingredients

Loaf

  • 1 (6 1/2 ounce) package pitted dates
  • 1 cup brown sugar
  • 6 tablespoons butter
  • 3/4 cup chopped walnuts
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 1 1/4 cups boiling water
  • 1/2 cup granulated sugar
  • 1 beaten egg
  • 2 1/4 cups sifted all-purpose flour (or use 1 cup cake flour)
  • 1 scant teaspoon salt

Butterscotch Sauce

  • 1 cup brown sugar
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour

Instructions

Loaf

  1. Cut dates into small pieces; sprinkle baking soda over and pour boiling water over. Let cool.
  2. Cream butter well; add sugar, then eggs.
  3. Blend in dates and flour; mix alternately.
  4. Pour into well-greased and floured* 9 x 13 x 2 inch pan.
  5. Bake at 350 degrees F for 45 minutes.

Butterscotch Sauce

  1. Mix brown sugar, flour and butter as for pie crust.
  2. Add 1 cup boiling water. Cook until thick, about 2 minutes.
  3. Add some vanilla extract and almond flavoring.
