Festive Cherry Bread

Ingredients

  • 1 (16 ounce) jar Durkee Maraschino Cherries (1 1/2 cups chopped cherries, 2/3 cup juice)
  • 2 cups granulated sugar
  • 4 eggs
  • 1 cup Durkee Flaked Coconut
  • 1 1/2 cups chopped walnuts, pecans or almonds
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Dice cherries and reserve cherry juice.
  2. Beat sugar and eggs together.
  3. Add cherries, coconut and nuts.
  4. Combine flour, baking powder and salt.
  5. Add flour mixture and cherry juice alternately to the egg mixture.
  6. Bake in 2 greased and floured* 9 x 5-inch loaf pans at 350 degrees F for 60 to 70 minutes.
