Green Tomato Bread

Ingredients

  • 3 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups granulated sugar
  • 1 tablespoon cinnamon
  • 2 large eggs, lightly beaten
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups finely chopped or ground green tomatoes - about 2 medium
  • 1 1/2 cups chopped pecans

Instructions

  1. Heat oven to 350 degrees F. Grease and flour two 8 x 4 inch loaf pans.
  2. Combine first 6 ingredients in a large bowl; make a well in center of mixture.
  3. Combine eggs, oil and vanilla extract; stir well.
  4. Add to dry ingredients, stirring just until moistened. Fold in tomato and pecans.
  5. Spoon batter into prepared loaf pans.
  6. Bake for 1 hour or until a wooden pick inserted in center of bread comes out clean.
  7. Cool in pans on a wire rack for 10 minutes.
  8. Remove from pans, and let cool completely on wire rack.
