Hallelujah Banana Bread

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups coarsely chopped walnuts
  • 2 large eggs
  • 1 1/2 cups mashed banana
  • 1/4 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 stick melted butter, cooled

Instructions

  1. Heat oven to 350 degrees F. Spray a 9 x 5 inch loaf pan with cooking spray.
  2. In a large bowl, mix flour, sugar, baking powder, baking soda and salt, stirring together to blend. Stir in nuts until evenly distributed.
  3. In a separate bowl, beat eggs, add bananas, sour cream, vanilla extract and cooled melted butter; mix with a spoon or spatula until well combined.
  4. Make a well in center of the flour mixture and pour in the wet ingredients. With a spoon or spatula mix until ingredients are combined. Pour into prepared pan.
  5. Bake for 50 minutes.
  6. Reduce oven temperature to 325 degrees F. Cover loosely with foil to prevent over browning and bake another 20 to 30 minutes or until center of loaf comes out clean.
