Hallelujah Banana Bread
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups coarsely chopped walnuts
- 2 large eggs
- 1 1/2 cups mashed banana
- 1/4 cup sour cream
- 1 teaspoon vanilla extract
- 1 stick melted butter, cooled
Instructions
- Heat oven to 350 degrees F. Spray a 9 x 5 inch loaf pan with cooking spray.
- In a large bowl, mix flour, sugar, baking powder, baking soda and salt, stirring together to blend. Stir in nuts until evenly distributed.
- In a separate bowl, beat eggs, add bananas, sour cream, vanilla extract and cooled melted butter; mix with a spoon or spatula until well combined.
- Make a well in center of the flour mixture and pour in the wet ingredients. With a spoon or spatula mix until ingredients are combined. Pour into prepared pan.
- Bake for 50 minutes.
- Reduce oven temperature to 325 degrees F. Cover loosely with foil to prevent over browning and bake another 20 to 30 minutes or until center of loaf comes out clean.
