Hawaiian Oatmeal Bread

Ingredients

  • 4 eggs
  • 1 1/2 cups granulated sugar
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 1/2 cups quick oats
  • 1 (20 ounce) can crushed pineapple, undrained
  • 3 cups (10 ounces) flaked coconut

Instructions

  1. Combine eggs and sugar and beat until light (about 2 minutes).
  2. Sift flour, salt and baking soda. Add to egg mixture and blend until smooth (about 2 minutes longer).
  3. Add remaining ingredients and mix very well.
  4. Spoon into two greased and floured* 9 x 5 inch loaf pans.
  5. Bake at 325 degrees F for one hour.
  6. Remove from pans immediately and serve warm or cold.
