Honey Pineapple Bread

Ingredients

  • 1 egg
  • 3/4 cup nut meats
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup All-Bran
  • 1 cup honey
  • 2 tablespoons shortening
  • 2 1/4 cups all-purpose flour
  • 1 cup pineapple juice

Instructions

  1. Heat oven to 325 degrees F. Grease a standard loaf pan, then line with wax paper.
  2. Blend shortening and honey.
  3. Add egg and beat well.
  4. Sift together the dry ingredients. Take out about 1/2 cup and mix with the nutmeats.
  5. Add about half the dry ingredients to the egg and honey mixture; mix well.
  6. Add All-Bran and pineapple juice, then remaining flour and the nutmeats.
  7. Pour into prepared loaf pan.
  8. Bake for 1 1/4 hours.
