Irish Gingerbread

Ingredients

  • 2 teaspoons butter
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1/2 cup soft butter
  • 1 egg
  • 1 cup molasses
  • 1 cup hot water
  • 2 cups all-purpose flour
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 2 egg yolks
  • 1/2 cup quick cooking oatmeal

Instructions

  1. Measure flour, baking soda, cinnamon, ginger and salt.
  2. Combine butter and sugar in a bowl and blend.
  3. Add egg and yolks. Beat until fluffy.
  4. Stir in molasses.
  5. Add dry ingredients, oatmeal and hot water, 1/4 at a time to egg mix.
  6. Pour into an 8 inch greased pan.
  7. Bake for 50 to 55 minutes at 350 degrees F.
