Key Lime Bread

Ingredients

Bread

  • 2/3 cup butter
  • 2 cups granulated sugar
  • 4 large eggs, slightly beaten
  • 2 tablespoons Key lime juice
  • 2 tablespoons lime zest
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 cup milk
  • 1 teaspoon salt
  • 1 cup chopped walnuts

Glaze

  • 2 tablespoons Key lime juice
  • 2/3 cup granulated sugar

Instructions

  1. Grease 2 loaf pans. Heat oven to 350 degrees F.

Bread

  1. Cream butter and sugar. Add the eggs and beat well.
  2. Pour in juice, zest and vanilla extract. Combine well; set aside.
  3. In another bowl, combine flour, baking powder and salt.
  4. Add a little of the milk into the dry mixture, then a little of the creamed mixture, alternating until all are combined.
  5. Add walnuts and mix to form a batter.
  6. Divide batter into 2 pans and bake for 50 to 60 minutes until brown.

Glaze

  1. Mix juice and sugar and spoon over the bread after baking. Wrap.
  2. Slice into 24 thin slices.
