Kiwi Walnut Bread

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups canned or cooked kiwi, drained and chopped
  • 3/4 cup chopped walnuts
  • 1 egg, beaten
  • 1 cup butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Sift flour with sugar, baking powder, baking soda and salt into large bowl.
  2. Add kiwi and nuts and mix well.
  3. Add egg, butter and vanilla extract. Stir until just blended.
  4. Turn into greased and floured 9 x 5 x 3 inch loaf pan.
  5. Bake at 350 degrees F for 1 hour or until done.
  6. Cool in pan for 5 minutes, then turn out on rack to complete cooling.
  7. Serve in thin slices spread with softened cream cheese. Strawberry cream cheese is a good choice.
