Lime Bread

Ingredients

  • 3 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 1/2 cups milk
  • 1 beaten egg
  • 1/4 cup vegetable oil
  • 1/4 cup lime juice
  • 2 teaspoons grated lime peel
  • 2 tablespoons granulated sugar
  • 1 tablespoon lime juice

Instructions

  1. Heat oven to 350 degrees F. Grease a 9 x 5 x 3-inch loaf pan.
  2. In mixing bowl stir together flour, sugar, baking powder, salt and baking soda.
  3. Combine milk, egg, oil, the peel and 1/4 cup lime juice. Add to dry ingredients all at once. Stir just until moistened.
  4. Turn into prepared loaf pan.
  5. Bake for 1 hour.
  6. Cool in pan for 10 minutes.
  7. Remove from pan onto rack.
  8. Combine the 2 tablespoons sugar and the 1 tablespoon lime juice. Spoon over top of loaf.
  9. Cool completely.
  10. Wrap well and store overnight.

Yield: 1 loaf
