Nutmeg Loaf


  • 1/2 cup margarine, softened
  • 3/4 cup granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 1/4 teaspoons ground nutmeg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup buttermilk

  1. In a mixing bowl, cream margarine and sugar. Add egg; mix well.
  2. Combine the flour, nutmeg, baking powder and baking soda; add to creamed mixture alternately with buttermilk.
  3. Pour into a 9 x 5-inch loaf pan that has been coated with nonstick cooking spray.
  4. Bake at 350 degrees F for 45 to 50 minutes or until a wooden pick inserted near the center comes out clean.
  5. Cool in pan 10 minutes before removing to a wire rack to cool completely.

Yield: 1 loaf (16 slices)
