Sweet Alabama Pecan Bread
Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs, beaten
- 1 cup vegetable oil
- 1 1/2 cups self-rising flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 1/2 cups pecans, finely chopped
Instructions
- Heat oven to 350 degrees F. Lghtly grease a 9 x 13 inch baking dish with butter or nonstick spray.
- In a large bowl, stir together the sugars, eggs and vegetable oil until incorporated.
- Stir in flour and salt until incorporated.
- Mix in vanilla extract.
- Fold in pecans.
- Pour batter into prepared baking dish and bake for 30 to 35 minutes, or until a wooden pick inserted in center comes out mostly clean.
- Let cool for at least 15 minutes before slicing and serving.
