Toasted Coconut Bread


  • 3 cups all-purpose flour, sifted
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1 1/3 cups flaked coconut, toasted
  • 1 tablespoon orange rind
  • 1 egg
  • 1 1/2 cups milk
  • 1 teaspoon vanilla extract


  1. Sift flour, baking powder, salt and sugar.
  2. Stir in coconut and rind.
  3. Beat egg until foamy. Mix with milk and vanilla extract. Stir into dry ingredients. Mix thoroughly, but do not beat.
  4. Pour into greased 9 x 5-inch loaf pan.
  5. Bake at 350 degrees F for 1 hour, 10 minutes.
