Irish Soda Bread Scones

Ingredients

Scones

  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 6 tablespoons unsalted butter, chilled
  • 1 tablespoons caraway seeds
  • 1/2 cup raisins or currants
  • 2/3 cup buttermilk

Instructions

  1. Sift flour, sugar, salt and baking soda.
  2. Add butter with a pastry blender for about a minute or until like coarse meal, then mix in raisins and caraway. Make a well in center and add buttermilk and mix in lightly. Dough should not be dry.
  3. Place the dough on a board or other surface and knead slightly until it just holds its shape. Handle it very little.
  4. Shape into an 8 inch disk. Cut in half, then cut into quarters. Dip tops in buttermilk then place on cookie sheet lined with parchment. Sprinkle with a little sugar also before baking, if desired.
  5. Bake at 375 degrees F for about 20 to 25 minutes. Turn halfway through baking.
