Pina Colada Granola

Ingredients

  • 4 cups oats
  • 1 cup flaked coconut
  • 1 cup slivered almonds
  • 1/2 cup wheat germ
  • 1/2 cup golden flax seed (or regular flax seed)
  • 1/2 cup dried pineapple tidbits
  • 4 tablespoons butter
  • 1/4 cup light brown sugar
  • 1/4 cup honey
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F.
  2. In a large bowl, combine oats, coconut, almonds, wheat germ, and flax seed in a large bowl.
  3. In a small saucepan, melt butter. Add brown sugar, honey, cinnamon, ginger, nutmeg and salt. Stir together until well combined.
  4. Remove from heat and stir in vanilla extract. Pour over oat mixture and stir well.
  5. Spread onto 2 well-greased cookie sheets and place in oven.
  6. Bake for 20 to 25 minutes, stirring occasionally, until golden brown.
  7. Remove from oven and allow to cool, without stirring, before adding the pineapple pieces.
  8. Store in an airtight container.
