Blueberry-Oatmeal Breakfast Cake

Ingredients

  • 1/2 cup brown sugar
  • 1 cup oatmeal
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 cup buttermilk
  • 1 cup blueberries

Instructions

  1. Combine sugar, oatmeal, flour, baking powder, baking soda and salt.
  2. Add oil, egg and buttermilk; mix well.
  3. Pour into a greased 8-inch square pan; sprinkle with blueberries.
  4. Bake at 375 degrees F for 35 to 45 minutes or until brown.
  5. Serve with syrup.
