Colorado Coffee Cake

Ingredients

Cake

  • 1/4 cup butter
  • 8 ounces cream cheese
  • 1 1/2 cups granulated sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

Topping

  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 cup brown sugar
  • 3 teaspoons cinnamon
  • Chopped nuts (optional)

Instructions

  1. Cake: In a large mixing bowl cream together butter, cream cheese, sugar and eggs.
  2. In a medium bowl sift together flour, baking powder, salt and baking soda.
  3. In a third smaller bowl combine the milk and vanilla extract.
  4. Add milk mixture to creamed butter mixture, stirring constantly until well blended.
  5. Add flour mixture to creamed ingredients, blending for 3 minutes or until well mixed. Spoon mixture into 3 greased and floured round 8-inch cake pans.
  6. Topping: Mix all ingredients together and sprinkle over dough mixture in each of 3 loaf pans.
  7. Bake cakes at 350 degrees F for 20 minutes.

Notes

Delicious hot or cold.
