Lemon Coffeecake

Yield: 12 to 16 servings

Ingredients

  • 1 1/4 cups granulated sugar, divided
  • 3/4 cup vegetable oil
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (15 3/4 ounce) can lemon pie filling
  • 1 1/2 teaspoons ground cinnamon

Instructions

  1. Heat oven to 350 degrees F. Grease a 13 x 9-inch baking dish.
  2. In a mixing bowl, combine 1 cup of the sugar and the oil; mix well.
  3. Add eggs; beat until light and lemon-colored.
  4. Combine flour, baking powder and salt; add to the egg mixture and mix well.
  5. Pour half into the prepared baking dish.
  6. Spread pie filling over batter.
  7. Top with remaining batter.
  8. Combine cinnamon and remaining sugar; sprinkle over the top.
  9. Bake for 30 minutes or until a wooden pick comes out clean.
  10. Cool on a wire rack.
