Rhubarb Coffee Cake

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 1/2 cups rhubarb, frozen or fresh, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup nuts
  • 1 teaspoon cinnamon

Instructions

  1. Heat oven to 350 degrees F.
  2. Cream butter and brown sugar.
  3. Add eggs, then dry ingredients alternately with buttermilk.
  4. Fold in rhubarb.
  5. Pour into 9 x 13-inch greased pan.
  6. Mix sugar, nuts and cinnamon.
  7. Sprinkle on top of the batter.
  8. Bake for 45 minutes.
